电饭锅和电饭煲谁实用

电饭锅蛋糕

首先,我们一起来看一下电饭锅蛋糕需要准备什么吧?

A部分(蛋黄糊):

牛奶:55g、色拉油:50g、砂糖①:35g、低粉:100g、蛋黄:5个

B部分(蛋白)

蛋白:5个、塔塔粉:3g(没有可以选用柠檬汁或者白醋)、盐:2g、砂糖②:75g

工艺流程

A蛋黄糊;牛奶、色拉油、砂糖①放在一起搅拌至完全乳化;加入过筛的低粉进行搅拌,搅拌至无颗粒状;搅拌均匀后加入蛋黄继续搅拌(画“z”字搅拌)




搅拌好的蛋黄糊可以用保鲜膜封起来,防止面糊边干

B蛋白;塔塔粉(白醋/柠檬汁)、砂糖②、盐放在一起混合均匀;开始打发蛋白(打发蛋白必须保证无水无油状态),分三次加入混合好的糖;蛋白出现大泡(第一次加糖);出现绵密小气泡(第二次加糖);明显打发发白(第三次加糖转高速继续打,打至图六状态即可)







打发好的蛋白粉两次加入蛋黄糊中均匀搅拌(翻拌发去搅拌)




将搅拌好的面糊,放入电饭锅中,震出气泡,按煮饭键(40-45min),切记:因为电饭锅的材质各有不同,在时间到了之后,可以用手去触摸表面是否蒸熟,如果没有熟,可以继续按煮饭键蒸
